Ingredients: 1 can Spam or ham or 1 lb sausage, or 6 - 8 bacon strips, diced 1/2 to 1 onion, diced (depending on size) Diced peppers (optional) 4 - 6 medium potatoes, cooked and cubed 6 - 8 large eggs, beaten Salt and pepper to taste (I use Garlic salt) 1/2 cup shredded cheddar cheese (optional)

Directions:In a skillet, cook bacon or sausage (if using Spam or ham add after potatoes are brown). Drain and remove from pan. In drippings, saute onion and potatoes (and peppers) until potatoes are browned, about 5 minutes. If using Spam/ham add when potatoes are almost done. Return bacon or sausage to pan with potatoes. Pour eggs into skillet; cook and stir gently until eggs are set and cooked to desired doneness. Season with salt and pepper. Sprinkle with cheese; let stand for 2-3 minutes or until cheese melts. Yield: 4-6 servings. |

Notes: Not sure of origin but I recall Uncle Ernie telling me the German name and that it meant Farmer's Breakfast. We (the Nagles) had this as a meal for almost any meal. We almost always make this with Spam not sure if this is because this was something that was available no matter where we were in the world or in military rations. Many times we had it for dinner, which is when Mother served it with baked beans which they put on top of the egg mixture. I preferred it with catsup or salsa. We generally make this in a cast iron pan when available.
