2 cups + 3 tsp. Flour
1 1/4 tsp. Baking Soda
1 tsp. Salt
2 cups Sugar
1 tsp. Cinnamon
1 1/2 cup Oil
4 Eggs
2 cups shredded Carrots
1 cup Crushed Pineapple, drained
1 cup chopped Pecans
1 cup Coconut

Cream Cheese Icing
8 oz. Cream Cheese, softened
1 stick Butter, softened
1 box Powdered Sugar
1/2 cup Coconut
1 cup chopped Nuts

Directions:
Directions:
Sift and mix dry ingredients. Add oil and eggs - 1 at a time. Beat after each egg is added. Add carrots and pineapple. Mix. Add nuts and coconut. Pour into prepared Bundt pan. Bake 375º for 40 - 50 minutes.

Icing:
Cream the butter and cream cheese. Add box of powdered sugar. Blend well. Add coconut and chopped nuts.
