NOTE: This recipe is for an 8" iron skillet; double for a 10" skillet

1 Cup self-rising Corn Meal
1/2 tsp Salt
1 Cup Buttermilk*
1/2 Cup Mayonnaise
1 Egg

2 Tbsp oil for pan (I prefer bacon drippings)

*Note: If you don't have buttermilk place 1 Tbsp Lemon Juice (or vinegar) into measuring cup, finish filling with milk, stir and wait a couple of minutes - voila: Buttermilk!

1. Place oil in pan and place in oven
2. Preheat oven to 450º
3. Mix ingredients together well
4. When oven reaches 450º pour mixture into pan and return to oven
5. Bake for about 30 minutes.
