Sauce (prepare first)This tastes like barbecue sauce:
1 medium chopped onion
3/4 cup water
1 TBS olive oil
1/2 bottle of ketchup
salt
garlic powder


Sliced, unpeeled eggplants (1/2" thick slices)

Veggie (or Canola) oil

Directions:
Directions:
1. Prepare the sauce first: Cook the chopped onion in the water, oil, ketchup, salt and garlic powder for about 20 minutes.

2. Slice unpeeled eggplant into thin (1/2" thick) pieces. Sprinkle each piece with a little salt. Place slices on a cookie sheet sprayed lightly with Pam. Brush each piece with a little olive oil and then broil until lightly browned. Turn them over, brush this side with oil, and repeat.

3. Spoon sauce onto each slice of eggplant. Bake at 350º for 10 minutes.

Don't make that face, these are amazing! The sauce taste like barbecue sauce and putting them on a somewhat crispy, flavorful eggplant slice is delicious! I suppose you could just put on a good barbecue sauce and not go thru the homemade sauce!

Grandma Tillie gave me this recipe in 1980. She would serve it often when Granddad had too many eggplants in his garden. Our old neighborhood friend, Steve Hendley, used to love these!
