1/2 cup butter
1 cup chopped green pepper
3/4 cup sliced onions
2-3 cups sliced zucchini
1 cup chopped celery
2 cups cubed eggplant
salt/pepper

1 cup bread crumbs
3 medium sliced tomatoes

Directions:
Directions:
Saute onions and celery until just tender. Stir in eggplant. zucchini, and green pepper and a little salt/ pepper and garlic powder. Continue frying for a couple of minutes only, then put it into a buttered (Pam) shallow casserole dish.

Top the semi-cooked veggies with fresh tomato slices.

Put a little butter into that same fry pan and add the bread crumbs. Spoon them onto the tomatoes.

Cook at 350 º for 30 minutes.

Granddad (Bob Rounds) used to be a prolific gardener. Grandma (Tillie Munushian Rounds) would try to get us kids to eat more of the vegetables he grew. This was a great recipe, as we all loved it! From 1979!!
