1 cup sugar (set aside)
1 cup salted butter, beat until soft
1 whole egg
1 tsp vanilla
1/2 tsp grated lemon rind
2 cups cake flour

Lemon Glaze
1 cup powdered sugar
1 1/2-2 Tbsp fresh lemon juice

Directions:
Directions:
Beat the butter until soft. Gradually add the sugar. Blend these ingredients until they are very light and creamy. Beat in egg, vanilla, & grated lemon rind. Sift in cake flour. (If butter is unsalted, re-sift flour and add 1/4 tsp salt.) Gradually stir flour into the butter mixture. Roll dough into 3/4 inch balls. Place on greased cookie sheet. Using a melon ball tool or round ball tool, press into center of each cookie and repeat again immediately after removing from oven while still warm and soft. Bake cookies at 375ºF for 10-12 minutes or until edges are light brown. Cool on rack. Fill each cookie with your favorite filling, such as canned lemon pie filling or make your own meringue filling, jams or jellies.

Lemon Glaze: In a small bowl, whisk together powdered sugar and enough lemon juice to reach drizzle consistency. Pour glaze into ziplock bag, seal and cut a small hole in the corner of the bag. Then drizzle the glaze over the cookies. Allow glaze to set at room temperature. Store in tupperware in fridge. Enjoy!
