2 C. Sugar 1-1/2 Sq. Un-Sweet or Semi-Sweet Baking Choc.

1/4 C. Sweetened Condensed Milk 1 tsp. Vanilla

1/4 C. White Corn Syrup 1/2 C. Chopped nuts (Optional)

1/4 C. Water

1/3 C. Butter

1. Combine first 5 ingredients in large saucepan. Use leftover butter to grease the
bottom and sides of a loaf pan.

2. Cook over medium heat, stirring occasionally, until it starts to boil.

3. Continue boiling about 5 minutes, stirring constantly, or until is reaches 225º on candy
thermometer.

4. Remove from heat. Add the unsweetened chocolate and stir it in.

5. Transfer to stand mixer using silicone
spatula.Add vanilla and beat on low, increasing to high. As soon as it starts to
thicken, stir in nuts by hand and pour into pan. Spread quickly and cut into
squares with sharp knife. Let cool.

IF using beater mixer. Leave in saucepan and follow same directions.

After making this a few times you get a feel for it. I don't have a candy thermometer,I just know by looking at it. When it turns golden yellow, and foamy, and on a flat stove-top, it's just about 5 min. of boiling, it's done. This is Matt's FAVORITE Christmas treat! Everyone loves it. Everyone in my family looked forward to my Granny making it every year :)
