Large skillet
1 medium zucchini cut in thin circles
Sliced onions
Green peppers
Sprinkle with grated Romano cheese as you add each ingredient
Half jar spaghetti sauce for casserole (rest for additional sauce as per taste)
2 cups rigatoni pasta-cooked
Mozzarella cheese

Directions:
Directions:
Layer zucchini in skillet

Sprinkle with pepper, garlic salt, Italian seasoning, garlic powder
Add a second layer of zucchini & repeat seasoning
Sprinkle with grated Romano cheese
Add sliced onions & sliced green peppers
Top with spaghetti sauce

Add a final layer of zucchini with seasonings, spaghetti sauce, 1/4 cup of water

Cook in skillet on low heat on top of the stove until zucchini is tender (about 30-45 minutes)
Add cooked pasta

Put a little juice from the mixture on the top of the pasta
Cook for 10 minutes

Top with mozzarella cheese, let cheese melt & sprinkle with Italian seasoning

Add a small amount of spaghetti sauce to the top
