Ingredients: 1-1/2 pounds round steak 1 white or yellow onion chopped 2-3 stalks celery chopped 2 tablespoons oil Flour, salt, pepper 2 cups water 2 beef boullion cubes 2 tablespoons ketchup

Directions: |
Directions:Cut steak into serving pieces, dredge in flour, salt and pepper. Heat oil in skillet and brown steak – both sides. Drain most of the oil then add the onion and celery – sauté for 2-3 minutes. Add the water, boullion and ketchup. Turn down heat, cover and simmer for 1 hour. Add a small can of peas, simmer slowly for another hour. |

Notes: This was my favorite dish when I was growing up and I always requested it for my birthday dinner. I remember well my twelfth birthday when Aunt Susan fell out of a tree next door and hit her head on a stone bench under it. She had a concussion which caused a lot of concern, she was supposed to be kept awake and watched all night Grandmama sat with me at the table so that I could have my swiss steak – I have teased Susan about this over the years saying she fell on purpose just to ruin my birthday. I was so amazed when I made this and it tasted just like what I remembered. The measurements might be off a bit, I’m copying a hand-written recipe and it isn’t very precise. 01/09/11
