2 1/2 cups flour
1 cup sugar
1 cup butter
1 1/2 tsp double-acting baking powder
1/2 tsp salt
1/2 tsp vanilla extract
1 egg

Decoration:
about 1/4 cup green sugar crystals
1 (1 1/2oz) container nonpareils

About 3 1/2 hours before serving or up to one week ahead:

To make the dough:
Cream sugar and butter. Add extract. Stir in egg until well blended. Add salt and baking powder. Stir in flour in 1/2 cup increments until all the flour has been blended. (Dough may be crumbly) Knead dough until mixture holds together. Separate dough into three equal pieces. Roll each piece into a log.

To form the trees:
Place green sugar crystals on waxed paper. Roll logs in sugar until well coated. Form each log into a triangle shape log by gently flattening the sides and bottom. Wrap each triangular log in waxed paper and refrigerate at least 2 hours.

Decorate:
Preheat oven to 350º. Slice 1/2 inch off each end of the log. Reserve scraps for tree trunks. Cut 1/4 in thick slices. Place slices about 1 in apart on ungreased baking sheet. use a small piece of the reserved dough to form a trunk. Attach to bottom of the slice. Sprinkle each with nonpareils.

Bake:
Bake cookies for 10-12 minutes at 350º until lightly browned.
