5 lbs, Mussels
1 large yellow onion, minced
1 large red onion minced
3 cloves of garlic
2 bay leaves
1 tsp dried tarragon
2 cups Pinot Grigio
2 T butter
2 T olive oil

Directions:
Directions:
In a massive pot:

Saute in the butter and oil the onions with the bay leaves. When the onions are translucent, add garlic, stirring for a minute. Add the tarragon and Pinot Grigio--bring to a boil.

Add the mussels and cover. Steam for 5 minutes, check to see if the shells had opened. Throw away any that remained closed.

Serve in large soup bowl making sure that each portion gets its share of the liquid.

Serve with some crusty french bread!
