2 tsp. vegetable oil
1/2 c. chopped onion
1/2 tsp. red curry paste
2 tsp. sugar
1 pound large shrimp peeled and deveined
2/3 c. light coconut milk
3 tsp. fish sauce
1/4 c. chopped green onion
2 tbsp. chopped basil

* If serving over white rice, prepare rice per package instructions.
Heat oil in a large nonstick skillet over medium-high heat. Add onion and curry paste and saute 1 minute, stirring occasionally. Stir in sugar, cook 15 seconds. Add shrimp; saute 3 minutes or until shrimp are pink and cooked through; stir frequently. Stir in coconut milk and fish sauce; cook 30 seconds. Remove from heat; stir in green onions and basil.
