1 1/2 tbsp. fresh lime juice
1 tbsp. fish sauce
1/2 tsp. sugar
2 tbsp. vegetable oil
1/2 c. shopped shallots or mild onion
1 tbsp. minced garlic
1 small jalapeno-minced
1 1/2 pounds peeled and deveined med shrimp
1 1/2 c. fresh or frozen corn (thawed)
1/4 c. chopped fresh cilantro

Directions:

Combine lime juice, fish sauce and sugar-set aside.
Heat a wok or saute pan over high heat. Add oil to pan, swirling to coat.
Add shallots, garlic and jalapeno to pan; stir-fry 30 seconds or just until shallots brown. Add shrimp to pan; cook 3 minutes or until pink. Add corn; cook 1 minute. Stir in juice mixture; sprinkle with cilantro and serve.
