1/4 cup vegetable shortening (Crisco in a stick)
4 TBL butter
1 cup plus 2 TBL flour
2 tsp. paprika
1/4 tsp. salt
freshly ground pepper
1 chicken (3 lbs.) cut up or use 4-5 half breasts with bones
1 can (30oz) cling peach halves, drained
1 1/2 cups hot milk
1 can (6oz) refrigerator Pillsbury biscuits

Preheat oven to 425 degrees. Place shortening and butter in a 9 x 13 glass baking dish and place in oven until melted. In a plastic or paper bag combine: 1 cup flour, paprika, salt & pepper. Add chicken, a few pieces at a time and shake to coat thoroughly. Place chicken skin side down in hot shortening. Bake 45 minutes then turn. If you use boneless chicken it will take less time. Push chicken to one end of pan. At the other end, arrange uncooked biscuits in a single layer without draining off shortening. Stick each peach half on top of chicken. Bake 15 minutes.
To make gravy, remove chicken, biscuits and peaches to a serving platter. Pour pan drippings into a medium size saucepan over medium heat. Whisk in 2 TBL flour and cook for 1 minute without browning. Whisk in milk, bring to a boil and cook stirring until thick and smooth. Serve as a gravy to chicken and biscuits.
