2 lbs Dried Lima Beans
1 lb Pork Belly, finely chopped
1 large yellow onion, finely chopped
1 large red onion, finely chopped
3 cloves garlic, minced
2 cups brown sugar
2 cups ketchup
2 tbs. Honey Mustard

Directions:
Directions:
Soak Lima Beans over night.

Next day bring the beans to a boil, and simmer until done (about 90 minutes). Drain the beans and save a cup of the liquid.

In a Dutch oven, saute the Pork Belly until rendered and add onions, cooking until the onions are transparent. Add the garlic and stir a minute,

Add the brown sugar, ketchup and mustard, lower the frame and simmer 15 minutes. When the sauce is done, add the lima beans and reserved liquid. Stir till blended. After it cools, refrigerate over night.

Next day heat in a 350º oven 30 minutes.
