Ingredients:

Meringue:

4 egg whites
1 tsp cream of tartar
1 cup sugar
Beat egg whites until foamy
Add cream of tartar and beat until very stiff
Add sugar slowly until glossy.
Put into buttered 9” pie tin
Bake at 300 for 1 hour, leave in oven overnight

Filling:
4 egg yolks
½ cup sugar
1 ½ lemons, juice and zest
Beat yolks until light, add juice and zest and sugar.
Cook in double boiler until very thick, Chill.

Topping:
2 cups whipping cream
½ cup powdered sugar
½ cup angel flake coconut
Beat cream to stiff peak, add sugar slowly.
Spread over lemon, sprinkle with coconut.

Chill at least 3 hours before serving.
