Flaky pie crust recipe for 9" double crust
4 cups huckleberries
2 1/2 tbsp tapioca
2/3 cup sugar
1/4 tsp salt
1/2 cup packed brown sugar
1 tbsp cider vinegar
1 tbsp butter

Directions:
Directions:
Roll out half of pastry dough & fit into pie pan; roll out top crust & set
aside. Mix together rest of ingredients except butter; pour into
unbaked pie shell & dot with butter. Add top crust & flute edges; cut
vents for steam. Place on baking sheet & bake @ 400 degrees for 15
minutes. Reduce heat to 350 degrees & bake
till crust is golden & juices are bubbling, 45 to 55 minutes more.

As a little girl we went picking huckleberries near the coal mines
of Schuylkill Co. We had to watch out for snakes as they lived in the
huckleberry bushes. Mom would make these delicious pies.
These berries are smaller & darker than blueberries & make the best
pies.
