1 cup plain yogurt, room temperature
3/4 cup oatmeal, dry, uncooked
1/4 cup whole wheat flour
1/2 tsp. sugar
1 tsp. baking soda
1/2 tsp. salt
1 egg, beaten

Directions:

Mix the yogurt and oatmeal. Allow to sit for a minute to soften the oatmeal. Add all other ingredients and mix thoroughly. Preheat griddle with a small amount of vegetable oil. Make a small test pancake to help get the proper heat setting. Cook pancakes on hot griddle until holes form and set then turn to cook other side. Makes 8 or 9 small pancakes.

Marjorie Russell made these pancakes for our breakfast when we visited in Philadelphia in the 1986. Her recipe includes a tip for raising the yogurt to room temperature. Remove the lid and place it in the microwave at 50% power for about a minutes. Use your judgment and a setting that makes sense for your particular oven. Starting with room temperature ingredients makes the pancakes rise and cook more evenly from the first to the last stack.

Baking soda may be cut in half if cakes are too salty. However, they will not be as light.
