1 cup sifted wholewheat flour
1 cup unbleached all-purpose flout
1/2 tsp salt
2 Tbsp vegetable oil
1/2 cup water

Directions:
Directions:
Put the two flours and salt in a bowl. Drizzle with 2 tablespoons of oil. Rub the oil into the flours so it resembles coarse breadcrumbs. Slowly add the water to form a stiff ball of dough. Empty the ball onto a clean surface. Knead it for 10-12 minutes until it is smooth. Form a ball. Rub about 1/4 tsp of oil on the ball and slip into a plastic bag. Set it aside for 30 minutes.

Kneed the dough again and divide it into 12 equal balls. Keep 11 of them covered with you work with the 12th. Flatten the ball and roll it to 5-5 1/2 inch round. Heat Oil and place one round in the oil. Use a metal spatula to hold down the round until it puffs up. Flip and fry for 10 more seconds.
