1 cup all-purpose flour
2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup low-fat buttermilk
1 tbsp. vegetable oil
1 large egg, lightly beaten
cooking spray or vegetable oil

Directions:
Directions:
Combine dry ingredients in medium mixing bowl and make a well in the center. Combine buttermilk, oil, and egg and mix well. Pour liquid mixture into the well of dry ingredients, stirring until smooth.

Heat griddle or large skillet sprayed with cooking spray or covered with a tablespoon of oil.

Drop ab 1/4 cup of batter onto hot griddle or skillet. Turn pancakes when tops are covered with bubbles and edges look cooked. Yields 9 (4-inch) pancakes.

We often add fresh or frozen blueberries. We always serve with Vermont maple syrup.
