1 (16 ounce) pkg of frozen chopped broccoli, thawed
2 (10 3/4 ounce) cans cream of chicken soup (substitute cream of mushroom)
1 small onion, chopped small
2 tbsp. butter
salt and pepper to taste
1 1/2 cups Minute Rice (white or brown)
2 cups shredded cheddar cheese

Directions:
Directions:
Saute onion in butter in large skillet until soft.
Add chicken soup, broccoli, salt, pepper and bring just to a boil.
Add rice and stir really well.
Place in a 2 quart casserole dish. Sprinkle the cheese on the top. Cover with foil.
Bake at 350º for 1 hour. Uncover and bake another 5-7 minutes.

Personal Notes:
For the crock pot version: I add 2 cups of milk, 1 can of cheddar cheese soup in place of the shredded cheddar cheese. Instead of placing everything in the casserole dish, I place it in my 4 quart crock pot on high for 2 hours or low for 4 hours. Enjoy!
