1 c. butter, softened
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 can (15 oz.) pumpkin
2 c. all-purpose flour
1 1/2 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. ground ginger
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1 to 2 c. raisins, for pumpkin raisin cookies
or
1 to 2 c. chocolate chips, for chocolate chip pumpkin cookies

Directions:

In a large mixing bowl, cream butter and sugars. Beat in egg and pumpkin.
In a separate bowl, combine the flour, cinnamon, baking powder, ginger, salt, baking soda, nutmeg and cloves; gradually add to creamed mixture. Stir in chocolate chips or raisins if desired.
Drop by tbsps. 2 inches apart onto greased baking sheets. Bake at 350º for 15 minutes or until lightly browned. Remove to wire racks lined with aluminum foil to cool.

Jon would need to make our cookies half and half! Half of the batch would be with chocolate chips, and the other half with raisins.
