2 lbs. potatoes, peeled and sliced
1 can chicken broth
3 Tbsp. olive oil
3 Tbsp. flour
1 1/2 cups 1% low fat milk
1 cup cheese, shredded
2 green onions, chopped
1/4 tsp. salt
1/8 tsp. pepper
3 Tbsps. bread crumbs
2 tsp. olive oil

Directions:
Directions:
Boil potatoes in chicken broth; drain & transfer to bowl.
Heat olive oil over low heat; whisk in flour; cook for 1 minute.
Add milk & cook , stirring til thick. Remove from heat; stir in cheese, onion,
salt & pepper. Add to potatoes; stir gently. Pour into buttered 2 - qt.
casserole dish & bake @ 350 degrees for 45 minutes or til potatoes
are tender. After first 30 minutes of baking sprinkle on bread crumbs
and olive oil.
