4 slices bacon, minced
1/2 cup diced carrot
1/2 cup diced onion
1/2 cup diced celery
1 clove garlic
1 cup lentils
2 cups water
3 cups beef stock
1/4 cup tomato paste
1/2 tsp. salt
1/4 tsp. pepper
1-1/2 cups diced potato
1-1/2 tbsp. red wine vinegar
slivered green onions
shredded cheddar cheese
Bouquet garni of:
3 cloves
1 bay leaf
3 parsley sprigs
1 thyme sprig

Directions:
Directions:
Saute bacon, carrots, onion, celery, and garlic until golden. Combine with lentils, water, stock, tomato paste, bouquet garni, salt and pepper. Cover and bring to a boil, simmering 1 hours. Add potatoes, bring to a boil, and cook another hour. Remove bouquet garni. Season with vinegar and adjust with salt and pepper. Serve topped with slivered green onions and grated cheddar cheese.
