1/4 cup butter
1 1/2 cups finely crushed vanilla wafer crumbs
1 envelope unflavored gelatin
1 1/2 cups water, divided
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
6 tablespoons sweet lemon juice or pre-sweetened lemonade flavor drink crystal

MELT butter in small saucepan; stir in wafer crumbs. Press firmly onto bottom and up sides of 9-inch pie plate; chill.
SOFTEN gelatin in 1/4 cup water in small saucepan. Heat until dissolved over low heat; set aside.
COMBINE sweetened condensed milk, remaining water and drink crystals in medium bowl; mix well. Stir in gelatin mixture.
POUR into prepared crust. Chill 3 hours or until firm. Garnish as desired.©º

Cora Mae White helped raise all of us Leighs, actually her mother, Mag,
was our cook in our home for a long long time, before Mag went to work at The Spencer's Cafe in Hernando, Mississippi, as the Chief Cook. Cora Mae was like a sister to me and all my brothers and sisters. We just loved Cora Mae more than anything. Whenever one of us had a special event, Cora Mae would fix us up a Lemon Ice Box Pie. I can taste it right now just thinking about it. Cora Mae was so special to us. She also was one of the pharmacy techs and supervised a lot of the services that were required at Christmas Time at my dad's Drugstore, Leigh Pharmacy, in Hernando, Mississippi. What wonderful memories we have working and being raised in the Drug Store. At the time, we knew just about everyone in town. Things were much much slower during the late fifties, sixties, and seventies. I credit our family working in the old Leigh Drug Store as teaching us hard work teaches you responsibility and how to deal with customers in good spirits. I miss my folks a lot.
