3 medium zucchini
2 tablespoons butter
1 cup chopped mushrooms
1 chopped minced shallot
1 minced garlic clove
2 tablespoons flour
1/4 teaspoon crushed dried thyme
1 cup shredded Monterrey Jack cheese (also good with Swiss cheese)
1/4 cup Parmesan cheese

Directions:
Directions:
Cook whole zucchini in boiling salted water about 5-10 minutes, drain. Cut in half lengthwise. Scoop out centers leaving a 1/4" shell. Chop center portion and set aside.

Melt butter in a large skillet; saute mushrooms and shallots about 3 minutes adding garlic towards end of the time. Stir in flour and thyme. Remove from heat. Stir in Monterrey Jack cheese and chopped zucchini. Heat mixture through.

Preheat broiler. Meanwhile, fill zucchini shells using approximately 1/4 cup filling for each. Sprinkle on the Parmesan cheese. Broil several inches from broiler element for 3-5 minutes or until hot and bubbly.

I got this recipe from Patti Obets and it is very good. The stuffed zucchini may be assembled in advance and refrigerated for up to 4 hours. Broil for 5-7 minutes instead of 3-5 minutes.
