1 cup butter
1½ cups sugar
2 eggs
2 ¾ cups flour
2 tsp. cream of tartar
1 tsp. soda
¼ tsp. salt

Directions:
Cream together butter and sugar. Beat eggs and add to creamed mixture. Sift together flour, cream of tartar, soda, and salt; stir into creamed mixture. Dough will be slightly sticky. Refrigerate or freeze dough for a couple of hours to make it easier to handle. In a small bowl, combine sugar and cinnamon.Shape dough into 1-inch balls and roll in cinnamon mixture. Place 2” apart on ungreased cookie sheet. Bake at 400° about 8-10 minutes. After removing from oven, let cool for about 2 minutes, then remove from cookie sheet. Store in airtight container. Makes about 6 dozen cookies.
Some notes on preparation: Make sure cream of tartar is fresh; otherwise the cookies will not have the right chewy-but-crisp texture and will be doughy.I find it easier to form balls of frozen dough (rather than just refrigerated), and make about a dozen balls at a time. Then roll 3-4 at a time in the cinnamon-sugar mixture and place on cookie sheet. If the dough becomes sticky, put it back in the freezer to chill. You can add a little flour to the dough, but too much will make these cookies thick and doughy. They should be light and crisp when eaten.
