Meat mixture:
1 lb. lean ground beef or turkey
1/2 sleeve Ritz crackers, crushed
2 tsps. minced garlic
1/2 tsp. salt
1/4 tsp. pepper
1 egg

Gravy:
1 can cream of mushroom soup
1 package Liption onion soup mix
1/2 beef broth, water or milk

Directions:
Directions:
Mix all ingredients together for meat mixture. Roll into golf-ball-sized balls. Brown all sides in skillet over medium heat. Drain grease.
Mix gravy ingredients together. Pour over meatballs. Allow to simmer 25 minutes, gently stirring occasionally over low heat. Serve over cooked noodles or rice.

When putting together this cookbook, I asked my daughter, Olivia, what was her favorite thing I cooked. Without hesitation she said the meatballs! The funny thing about this recipe is that I remember my aunt, Kathy Leigh, making something similar for us when Olivia was born. Guess it was always meant to be a special recipe for her.
