4 eggs
4 c. milk
4 tbs sugar
4 tbs Minute tapioca
1/4 tsp salt
1 tbs vanilla
8 tbs sugar

Directions:
Directions:
Separate the eggs; mix egg yolks, milk, 3 tbs sugar, tapioca and salt in sauce pan. Let sit for 5 minutes. Beat egg whites until foamy; gradually beat in remaining sugar and beat until soft peaks form. Set aside egg mixture. Cook tapioca mixture over medium heat, bringing it to a full boil while stirring constantly. Approximately 6-8 minutes. Cool, stir in vanilla. Fold the egg whites into the pudding mixture. Chill and serve. Can also be eaten hot, warm or cold.
