2/3 Cup butter
2/3 Cup brown sugar
2 large eggs
1 1/2 cups old-fashioned rolled oats
1 1/2 cups flour (you can sub 1 cup wheat flour for a higher fiber cookie)
1 tsp. baking soda
1/2 tsp. salt
1 package of dried cranberries
2/3 cup white chocolate chips or chunks

Directions:

Using a whisk or mixer, beat butter or margarine and sugar together in a mixing bowl until fluffy. Whisk in eggs. Combine, oats, flour, baking soda, and salt in a separate bowl, then slowly add to butter mixture a little at a time mixing well with each addition. Stir in cranberries and chocolate chips.

Drop rounded spoonfuls onto a greased cookie sheet and bake for about 10 minutes or until golden brown.

You don't have to add in an entire package of cranberries to the mix, I just really like craisins.
