4 Salmon Fillets, skinned (atlantic salmon works best)
1 lb. of asparagus spears, tough ends removed
2 Tbsps. olive oil or butter
1 Tbsp. minced garlic
Cavendar's Greek seasoning to taste or seasonings of choice
Salt and Pepper
Fresh dill sprigs or herb of choice
1 Lemon thinly sliced

Preheat the oven to 400 degrees. Cut four sheets of aluminum foil about 16 inches long. Divide the asparagus into four equal portions and lay onto the middle of foil sheets. In a bowl combine the oil and garlic and drizzle half over asparagus, if using butter, melt butter in microwave. Then sprinkle seasoning of choice over asparagus. After rinsing salmon and allowing it to dry, season the bottom of fillet with seasoning of choice (I usually add a mix of baltic curry and salt) . Lay each salmon fillet seasoned side down on top of asparagus bed then drizzle each fillet with the other half of oil. Season the top with a dash of salt and pepper. Then, top each fillet with two thin slices of lemon and a few sprigs of dill or herb of choice. Pull the sides of foil up and wrap at the top to create a tent over salmon.

Place your tents on a baking sheet and bake for about 25-30 minutes or until salmon is well-cooked.

This recipe can be easily modified to suit different people's tastes, such as subbing orange for lemon or adding some brown sugar to your salmon seasoning. The asparagus can also be substituted with zucchini, squash, or other quick cooking vegetables.
