1 lb. Brussel sprouts
1Tbs. olive oil
Salt to taste
Pepper to taste

Directions:
Heat oven to 450 degrees. Slice ends off sprouts and cut in half. Toss in olive oil, salt and pepper. Roast in oven for about 15 minutes or until desired tenderness. Serve as a delicious side item.

I cook most veggies this way for a healthy and quick side item. Great for cooking okra, carrots, asparagus, red potatoes, or sweet potatoes. Should adjust cooking time depending on the veggie.
