2 ten ounce packages of frozen chopped broccoli, cooked according to package directions, or about 4 cups of fresh cooked chopped broccoli.
1 cup mayonnaise
1 cup chopped onion, sautéed until tender
1 cup grated cheddar
1 can mushroom soup
2 eggs, beaten

Preheat oven to 350º. Combine all ingredients in a greased 9 x 13 casserole dish. Bake uncovered for 40 minutes.

I served this casserole using leftover fresh broccoli from our 2015 Ledbetter Christmas Brunch. Everyone liked it more than the fresh steamed broccoli. It was elegant and delicious.
