1 lb ground beef
2 ( 10 oz) cans tomato's condensed soup,add water per directions on can plus additional 2 c
1/2 c uncooked quick-cooking barley
1 c celery,sliced
1 c frozen mixed vegetables
1 c finely shredded low moisture part skim mozzarella cheese

1 in a 4 qt dutch oven,brown beef over med-high heat 5 to 7 min,stirring occasionally,until thoroughly cooked;fat if needed
2.stir in soup,water,barley,&celery,bring to a boil stirring occasionally.reduced heat to low;simmer uncovered about 15 min stirring occasionally,until barley is tender.
3. add frozen mixed vegetables & cook 6 to 7 min stirring occasionally,until hot
4. serve & garnish each bowl with cheese
