1 can black-eyed peas, rinsed and drained
1/2 cup Italian dressing
1/4 cup sweet bell pepper, finely chopped
1/4 cup finely chopped onion
1 tsp. jalapeņo pepper
1-20 ounce jar pimentos, chopped and drained
1 tsp. chopped garlic
1/2 tsp. salt

Place peas in bowl. Add Italian dressing. Add chopped pepper, onion, jalapeņos, pimentos, garlic, and salt. Mix well. Cover and refrigerate overnight. Serve with your choice of crackers.

This recipe was given to me by my college roommate Nancy Sturdivant Hand from Glendora, MS. Mississippi Caviar was served each New Year's at their family's Good Luck Plantation located in the Mississippi Delta near Glendora. Dining on this dish on New Year's Day, according to farm lore, guaranteed a fruitful bounty during the harvest season each year. You can add more jalapeņo if you prefer it spicier, but more than a teaspoonful is too hot for me.
