2 cups Quaker Oats
2 Cups White Sugar
1 Tablespoon Flour
1/2 teaspoon salt
2 sticks unsalted butter
2 eggs, lightly beaten
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 350 degrees

Combine oats, sugar, flour, and salt. Melt butter and pour over oats mixture while very hot. Stir until sugar in mixture is completely dissolved. Stir in vanilla and eggs, and mix until thoroughly blended.

Cover cookie sheets with aluminum foil. Drop scant teaspoonfuls of dough on foil at least two inches apart.

Bake 10 minutes or until edges are lightly browned. These cook very quickly so watch carefully.

When cookies have cooled thoroughly, remove from foil and start another batch, repeating process until all dough is baked. It helps to have several cookie sheets so you can pop a new batch in while removing previous batch from other cookie sheet, otherwise you spend all day in the kitchen.

These cookies are freezable in airtight containers so they are a great option for holiday gift giving. This is a recipe I got many years ago from our friend Vera Bunten. I have used it every year since I was in junior high because it is foolproof and the cookies are always perfect.
