5 egg whites at room temperature
Almond extract
14 oz. sugar (almost 2 cups)
4 cups of almond meal (ground almonds, like flour)
Coloured sugar or maraschino cherries to decorate

Preheat oven to 325 degrees.
Whip the 5 egg whites into peaks with mixer
Once peaks start to form, add about 1 tsp. of almond extract - or more if you like them to taste stronger. (Hint: I smell the egg whites to see if the almond smell is strong enough.)
In another bowl, mix the sugar and almond meal together. Gently fold into the whipped egg whites until all is moist.
Once mixed, roll small balls in your hand and put on a cookie sheet covered with parchment. The dough should be a bit wet but easy to roll. I usually wash my hands after rolling 8 or 10 cookies because hands get sticky.
Place cookies on parchment and flatten just lightly. I then add a bit of coloured sugar (at Easter) or, at Christmas, a piece of red or green maraschino cherries to the centre.
Bake at 325 degrees for 20-25 minutes until cookies rise slightly and are light gold in colour, with cracks on top. The cookie should be crispy on the outside and chewy inside. (If the mix is too dry when rolling, add a bit more whipped egg white. If the cookie is too flat when baking, add more almond meal to the mix.)
