Nonna Rina's Tomato Sauce Recipe

Ground beef
Half an onion, chopped into tiny pieces or left whole so it is easy to remove when cooked
One or two cloves of garlic, finely chopped or left whole to remove
Half a carrot or a few small ones
Half a celery stalk
If desired, a few pieces of finely chopped red pepper
A couple of basil leaves if available
Salt, pepper, chili pepper if desired

In a large stock pot, add olive oil. I add a handful of lean ground beef (or more to make a thick meat sauce a la bolognese). Stir the ground beef with the veggies to lightly cook the onions and garlic along with the carrots and celery (and red pepper if desired). Stir with a wooden spoon while the meat browns. Keep temperature low so that the onion and garlic do not burn. If it does, remove it with a spoon.
Once the meat is browned and veggies have softened a bit, throw in 2-3 jars of strained tomatoes. If the tomato is thick, I fill the same jar almost full of water and add it to the pot. (e.g. 3 full jars of strained tomatoes plus 3 almost full jars of water in the pot). If using fresh made jars of tomatoes, no need to add water. Throw in a couple of fresh basil leaves if available.
Cover and let simmer for a couple of hours. Smells so good!
(If making meatballs, I cook them separately in the oven or frying pan then throw them into the sauce to finish cooking.)

Making tomato sauce is an art. Even though I tried to make it when I was first married, I never mastered it until Nonna Rina stopped making it for me! Then I had no choice and, even then, it was never quite as good as Nonna's!
The sauce can be easily frozen and defrosted for a quick supper.
