"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 sticks butter, cut into tiny bits and slightly softened
1/2 c. sugar
1 1/2 c. dark brown sugar
2 eggs room temp.
2 tsp. vanilla
2 3/4 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. sea salt
2 1/4 c. choc. chips (use semi sweet or mix of milk/dark/peanut butter)

Directions:
Directions:
1. Preheat oven to 375.
2. Cream butter, sugars until light and fluffy (about 2 min.)
3. Add eggs one at a time, mixing well. Add vanilla. Add flour, baking powder + soda, salt. DO NOT OVERMIX! I don't know exactly what overmixing is, but for God's sake don't do it.
4. Add chocolate chips, nuts, sprinkles, nutella, or whatever else you want to put in. I did 1 c chocolate and 1 c nutella once and it was divine.
5. Form into 1/4 c. size balls, 6 to a sheet. (You can go smaller, just reduce bake time.) Bake 1 sheet at a time on top rack (about 8 in. from broiler). Bake for EXACTLY 11 minutes. Should look underdone when you take it out. Cool on sheet about 2 min. until you can remove to cooling rack without falling apart. And it should make about 24 cookies.

Personal Notes:
This is a recipe from Nate's brother, Dave. As he once said, "I am going to see if I can give you the cookie recipe FROM MEMORY. If I am successful, then this will explain why my tummy is so round." These cookies are perfect in every way, and you can make them with M&Ms, nuts, nutella, any kind of choc. chips, etc.
