1 lb. sharp cheese - Hand shredded or the finely shredded store version
1/2 of 12 oz. cottage cheese
1 small onion
1 small jar of chopped pimento
1 tsp. seasoning salt
Duke's Mayonnaise
2 tsp. of India pickled relish

Directions:
Directions:
Adjust amounts (usually less) of the ingredients such as cottage cheese, onion, and relish to your taste. Use enough of the Duke's Mayonnaise to make the consistency the way you like it, depending on whether you are making a cheese ball, or as a sandwich spread, etc.

My Aunt Mary Ruth used to come to visit with Aunt Roberta most of the time. In 1982, while I was living in Atlanta, Aunt Mary Ruth made a round robin trip between Memphis and Fort Myers, Florida, where her son Stafford and his family had moved. I invited her to stop in Atlanta during her journey for a day or two, which she did. Mary Ruth didn't really like to cook very much, but she said she always kept two things in her home at all times in case she got hungry, One item was ice cream. She believed ice cream would cure almost any illness. The other was pimento cheese. While she was visiting, I asked her to make her version of pimento cheese. I wrote down her instructions, since she had it all committed to memory and not in written form. I am not sure if she got her recipe from her own trial and error or from a friend. Mary Ruth was one of the most intelligent women it has ever been my pleasure to know. Like most of the Leighs, she was an independent thinker. After she visited with Stafford for a few weeks, she stopped back in Atlanta on her way back to Memphis. After spending many years living in Memphis near her beloved sister Roberta, Mary Ruth relocated permanently to Fort Myers, Florida, to be close to Stafford and her granddaughter, where she remained there until her death. I loved my Aunt Mary Ruth. Her refreshing attitude on life always made me smile and her sense of humor was a treasure.
