! cup butter, room temperature ( 2 sticks )
1/2 cup sugar
2 eggs, room temperature
1 tsp of vanilla
pinch of salt
2 cups of flour
1 cup of chopped nuts ( optional )
3/4 cup of you favorite jam ( raspberry)
parchment paper

Directions:
Directions:
Cream butter and sugar on high for about 3 min
.
Separate the eggs. Add the yolks and vanilla to the butter mixture. If using nuts, place the egg white in a shallow dish in the side and whisk them until bubbly and frothy ( the egg whites will be used to keep the nuts on the cookies)

Add flour and salt, mix until just combined. Place the dough in the fridge for 30 min. and pre heat oven to 350

roll dough into balls about 1 inch in diameter. if using nuts, dip each ball into the egg whites the roll into the nuts until covered. Place the balls on parchment lined cookie sheet.

Press down with your thumb to make small well in the center of each cookie. Do not press too hard or the cookie will fall apart. Fill 1/2 tsp. of jam.

Bake for 12 - 15 min. or until slightly firm. Allow to cool a few min. on cookie sheet to firm up before removing them to wire rack.
