One whole chicken or one chicken carcass or one turkey carcass

Place the chicken (or a carcass) in the basket of a pasta pot. Submerge in water, cook all day. Poke it down from time to time, or add more water if necessary.

Lift out the bones, set the entire basket on a plate and let cool.

When cool, go through and remove all the meat you can from the bones. You can either add it back to the stock for soup, or set it aside for later. Discard the bones when they are all "clean".

I like using the pasta basket because it makes removing the bones from the broth so easy. Just lift it out.
