8 slices of bacon
6 eggs, beaten well
Grated cheese

Directions:

In large (but not gigantic) muffin tins, line 8 cups with bacon around the edge.

Pour some of the beaten eggs into each cup.

Put a generous amount of cheese on top.

Bake at 350º for about 1/2 hour. Serve hot.

Ok, so personally, I don't like my bacon super crisp. This bacon will come out looking soft and a bit greasy. If you don't like your bacon that soft, you may want to line the muffin cups with the bacon, and then put them in the oven for a few minutes first, before filling with the eggs.

You can also add in other goodies if you like - I like chopped zucchini or mushrooms to be added before pouring the eggs in.
