• 3 cups of cake flour or 2 ½ cups all purpose flour
• 2 cups white sugar
• 2 tsp. cinnamon
• 1 tsp. baking powder
• 1 ½ tsp. baking soda
• 1 ½ tsp. salt
• 2 cups grated carrots

• 1 8 ¾ oz. can crushed pineapple
• 1 ½ cups of nuts(Pecans) - 100g of nuts = ¾ cup
• 3 large eggs
• 1 cup vegetable oil
. 2 tsp vanilla

Cream Cheese Icing
- 2 pkg (8 oz/250g) soften cream cheese
- ½ cup softened butter
- 1 tsp vanilla
- 2 cups of icing sugar
Beat cream cheese and butter until smooth
Beat in vanilla
Beat in icing sugar 1/3 at a time, until smooth

Directions:
1. Sift flour
2. Mix dry ingredients together
3. Add and mix in pineapple juice and carrots to dry ingredients
4. Mix eggs, pineapple, oil, vanilla and nuts in small bowl
5. Mix wet and dry ingredients until dry ingredients are wet
6. Bake in 10’’ greased tube pan 1 ½ hours @ 325 F

I got this recipe from Marilyn in 2001. I have make this on numerous occasions since and it always receives great reviews. I made it for Marilyn's 60th birthday. The last occasion was Eva's christening on November 20/16
