1/2 cup wild rice, uncooked
1 lb ground beef
1 can chicken broth
1 can condensed cream of mushroom soup
2 cup milk
1 cup Cheddar cheese, shredded
1/3 cup shredded carrot
1 pkg Ranch salad dressing mix
Chopped green onions

Directions:
Directions:
Cook rice according to package directions to make about 1 1/2 cups rice. Remember, we're in high altitude in Prescott, so you'll want to allow for extra cooking time. Also, I always buy my rice in bulk from health food stores. It's less expensive and much fresher.

In large sauce pan, brown beef, drain. Stir in rice, chicken broth, soup, milk, cheese, carrot and dry salad dressing mix.

Heat to a simmer over low heat, stirring occasionally, about 15 minutes. To serve, garnish with green onion tops. Can also put green onions on the side if preferred.
