1 pound of boneless cod fillets
1 T olive oil
6 T butter
1 med onion, finely diced
4 T flour
1 1/2 c milk
2 c Med shredded cheese
Sea salt and pepper to taste

Directions:
Directions:
Heat oven to 375F
Place fish in a med sized saucepan and just cover with water.
Add a pinch of salt and bring to a boil.
Reduce to simmer and cook fish through (do not overcook)
Remove from heat, drain well and place in a greased casserole dish
In a large frying pan add oil and melt butter. Fry onions until translucent
Add flour and cook for 1 to 2 min, coating onions
Add milk and stir as sauce thickens
Add 1 cup of cheese and stir until smooth and the thickness of pourable gravy (if too thick, add milk: if too thin add cheese)
Add salt and pepper
Pour sauce over fish stirring gently so that the fish is not broken up too much
Bake for 20 min
If you wish to brown top place under broiler for a few min
Top with remaining cheese f and bake for 20 min.
Add salt and pepper
