8 potatoes, peeled, sliced
1 onion, sliced thin
1 cup milk
2 eggs
2 or 3 cups chopped or sliced ham
4 cups grated cheddar cheese
Salt and Pepper to taste

Directions:
Directions:
Place layer of potatoes in bottom of sprayed glass baking dish. Add a layer of onions, then a layer of ham. Sprinkle with cheese. Repeat until all ingredients are used.

Mix milk and eggs together. Sprinkle casserole with salt and pepper, then pour the milk mixture over the top.

Bake about 1 hour, 15 minutes until potatoes are fork-tender. You may want to top it off with some more cheddar cheese for a quick melt.

My mom used to make scalloped potatoes and ham a lot. We loved it. It's a great derivative use for ham.
