2 cups all-purpose flour
2 tsp baking soda
1 tsp ground cloves
1 tsp ground ginger
2 tsp ground cinnamon
1/4 tsp salt
3/4 cup solid vegetable shortening
1 1/2 cups sugar
1 large egg
1/4 cup dark molasses

Directions:

Oven at 375 º

Spray insulated cookie sheets.

In mixing bowl, combine shortening and 1 cup of sugar. Beat on medium speed until light and fluffy, about 2 minutes. Add egg and molasses, beat to combine. Add dry ingredients and mix on low speed.

Place the remaining sugar in a small bowl. Roll dough into balls about 1 1/2 inches across. Roll in sugar. Place about 2 inches apart on the cookie sheet. Bake for about 12 minutes, or until the cookies begin to crack. Don't overcook!

Let cookies cool on a wire rack. Store in an airtight container.
