Monti's Roman Bread Recipe

1 1/2 c water
1 TBS sugar
2 1/4 tsp yeast
2 TBS oil (I use olive oil)
4 c flour, I use bread flour
2 tsp salt
2 tsp Rosemary

Directions:
Directions:
Heat water in microwave about 45-60 seconds. Pour into mixing bowl, add sugar and stir slightly, add yeast and stir again. Let sit until yeast is bubbly.

Add in the oil. Gradually add in flour, salt and rosemary. Use enough flour for the dough to form a shiny ball.

Let rise until doubled.

Punch down, let rest about 5 minutes.

Flatten out until about 1 inch thick on oiled cookie sheet. Brush with oil (again, I use olive oil) and sprinkle with additional rosemary and salt. Cut into 16 squares with pizza cutter.

Let rise until double, bake at 400 for 20-25 minutes.

Alas, Monti's Restaurant has closed, but this is the recipe for the bread they served. Some versions add in 1/2 c chopped onion.

It is said that the recipe was used in the Monti family for at least 80 years, brought over from Italy.
