Cookie Dough
1 c. Brown sugar
1 c. Shortening
2 eggs
2 c. flour
2 c. oatmeal
1 tsp baking soda
1/2 tsp baking powder

Filling:

1 c. sugar
1 c. Water
1 lb. dates, chopped
A little lemon juice

Directions:
Directions:
Cream brown sugar and shortening. Add eggs, then flour, oatmeal, baking soda, baking powder. Mix well, cover with plastic wrap and set aside.

Place filling ingredients in saucepan. Cook until blended. Let cool.

Roll out dough on powdered sugared board. Cut into rounds 2 or 2 1/2 inches across. Place a partial spoonful of filling in the middle of a cookie round, and then place another cookie round on top. Pinch edges to seal.

Cook at 350 for 12-15 minutes or until golden brown. Do not overcook.

Remove from cookie sheet and let cool on rack.

These were my Grandmother Saline's favorite cookies. She made them at Christmas. Sometimes there is enough filling to use for a second batch of cookies.
